    The Portabella is the prime rib of the vegetable world! Tastes fabulous grilled—brush with olive oil, add garlic or soy sauce if you like, then grill for about 3-5 minutes on each side. Can also be eaten raw. More info

    Sugar Snap Peas

    Sugar snap peas are all about texture, sweetness, and crunch. They don’t take long to cook—1 to 2 minutes max. Resist overcooking—you’ll end up with sad, limp peas. Cut your snaps in thirds crosswise, or halve lengthwise on a long diagonal. Cut them before or after steaming. If boiling, cut them afterwards or else the tumbling action of boiling water will free the peas from their pods. Enjoy raw for a snack. More info

    A variety of endive with less bitter leaves. Tastes similar to radicchio. High in folic acid, fiber, and vitamins A and K, escarole can be eaten raw or gently cooked. Use in salad, wilt quickly with lemon, or add to soup. More info

    Bunched Green Onions

    From: Barber Farm (Organically Grown in Middleburgh, NY)

    Spring onions have long, green, delicate stalks with golf-sized onion bulbs. Spring onions are sweeter and mellower than regular onions, but the greens have a more flavor than scallion greens.  Like scallions, spring onions can be used raw or cooked. Because raw spring onions are pungent, taste to make sure their flavor does not overpower more delicate flavors. You can slice raw spring onions thinly onto green salads.

    Golden Delicious Apples

    One of the most popular apples! Golden delicious are crisp, sweet, and white-fleshed. These apples have a nice balance of sweet-meets-tart, and makes them the perfect fresh eating variety. They are also a great variety for baking! Turn them into crips, crumbles, tarts, cakes, and breads. More info
