      The crimini mushroom Is a moderately mature version of the white button mushroom. It's younger than the portobello, but still related, which is why these are sometimes sold as "baby bella" or "baby portobello" mushrooms. They are great for stuffed mushroom caps.

      Caramelize onions in 10 minutes: Place chopped onions in a dry pan without salt and cook over medium-high heat until dark brown and softened, about five minutes. Add oil and a pinch of salt, then cook for five more minutes until completely soft. Throw on top of bread for a snack, or use as a garnish to just about any meat or fish. Add to pasta, soup, or pizza.

      You can't beat freshly harvested spring carrots for sweetness and crunch. This time of year, we think they are best eaten raw, but whether you roast or steam you will love them. Cut the greens off to use for pesto or as you would parsley. Removing the tops will also keep your carrots crispy.
