      When cooked, the flesh of spaghetti squash falls away into ribbons or strands, which makes a great substitute for pasta. The flesh can also be baked, boiled, steamed or microwaved, and the seeds can be roasted and eaten like pumpkin seeds.

      Did you know that a cup of raw beets has only 58 calories? Beets are in the same family as chard and spinach. Chop and slow roast at 350 for 1 hour. Julienne the beets and toss with oil and lemon—beautiful and tasty. Roast, sauté, steam, and more... but try not to boil! Boiling sacrifices the quality and flavor of the beet and releases an unpleasant aroma.

      Caramelize onions in 10 minutes: Place chopped onions in a dry pan without salt and cook over medium-high heat until dark brown and softened, about five minutes. Add oil and a pinch of salt, then cook for five more minutes until completely soft. Throw on top of bread for a snack, or use as a garnish to just about any meat or fish. Add to pasta, soup, or pizza.

      A sunchoke is a woody-looking tuberous formation found on the rhizome (horizontally growing underground stem) of a type of sunflower. Its rough pale-brown skin makes it somewhat akin to fresh ginger in appearance, but you're more likely to see it broken up into individual pieces. Also unlike ginger, its flavor is mild, similar to that of a potato or jicama, but nuttier and sweeter.

      One of the most popular apples! Golden delicious are crisp, sweet, and white-fleshed. These apples have a nice balance of sweet-meets-tart, and makes them the perfect fresh eating variety. They are also a great variety for baking! Turn them into crips, crumbles, tarts, cakes, and breads.

      Baby bananas or petite bananas wear a thin, bright yellow signature peel. As their name suggests, they are petite in size, averaging only three to four inches in length.
