cremini mushrooms

From: Bulich Mushroom Farm (Family Farm in Catskill, NY)

We enjoy the cremini mushrooms a lot; their slightly more mature state means that they have a browner color, firmer texture, and better flavor than the younger white mushrooms. We use them frequently in stews and soups, since we find that they hold up better in liquid.

The Yukon Gold. These yellow-fleshed potatoes are waxy enough to stand up to , but fluffy enough to make the best possible mash. And for crispy roasted potatoes, nothing is better, they get a good crackly crunch and a creamy interior that cannot be beat. The flavor of the potato is slightly buttery, which is why it works so well in mashed potatoes. And the yellow color is really pretty.
