The prettiest beets you can find. The Chioggia beet, also known as the candy cane or candy stripe beet, hails from Northern Italy and became popular in the 19th century. It’s most notable for its striking deep pink and white spirals. Roast until just tender; cut up for salads, and sauté the greens.

Cooked chard is a great stand-in for spinach. The stems can be steamed or grilled like asparagus. While Swiss Chard is naturally bitter, cooking mellows the flavor. Unless the stems are tender, remove them and just prepare the leaves. You can prepare chard in a jiffy by sautéing it in olive oil with some garlic—toss in some chili for a little zip. More info

Also known as scallions or green onions, spring onions are young onions harvested before onion bulbs have matured. Spring onions taste great raw in salads; they can also be grilled, roasted, or stir-fried. We recommend grilling, especially with some balsamic vinegar and oil. Both the slender green tops and white bulbs are edible.
