      Green Beans

      These cook in under 10 minutes. Add lemon, garlic and butter. Easy. Do not wash until ready to use. You can freeze green beans—blanch for 3 minutes, plunge in cold water for 3 minutes, drain, drop in a plastic bag and in the freezer they go. More info

      Romaine Lettuce

      From: Dagele Brothers Farm (Integrated Pest Management in Florida, NY)

      Romaine is a variety of lettuce grows in a tall head of sturdy dark green leaves with firm ribs down their centers. Unlike most lettuces, it is tolerant of heat, which is why field grown it is available longer into the summer than other varieties.

      Curly Green Kale

      From: Farm at Miller's Crossing (Certified Organic in Hudson, NY)

      Easy to cook and incredibly healthy. For a quick dish, cook kale for a minute in a pot of boiling water. Drain, squeeze out excess water, and sauté with olive oil and garlic for just a couple minutes. Remember to try kale chips if you haven't yet! More info
