    Pea shoots are young pea vines. These nutritional powerhouses are packed with vitamins A, C, and folic acid. Sauté quickly with olive oil and garlic for a healthy side dish, or put out on the table raw for a snack. To entice the little ones, try tossing with a little melted butter and sugar. Pea shoots also make wonderful pesto; all it takes is 10 minutes, 7 easy ingredients, and a plate of pasta for an amazing meal.

    romaine lettuce

    Romaine is a variety of lettuce grows in a tall head of sturdy dark green leaves with firm ribs down their centers. Unlike most lettuces, it is tolerant of heat, which is why field grown it is available longer into the summer than other varieties.

    From: Dagele Brothers Farm (Integrated Pest Management in Florida, NY)

    Spinach is best when eaten raw or lightly braised. To braise, toss with hot oil and garlic for a few minutes and then add a splash of liquid. We like to add Parmesan cheese. If you choose to steam the spinach, wash and steam for just 5-10 minutes. This preparation method preserves nutrient content.
