avocado, pea shoot, and egg toast
Loaded toasts make for the best breakfast or mid-day snack! Especially when there are pea shoots involved. Layer your toast with the ultimate springtime goods like local pea shoots, farm fresh eggs, and spices. It's extremely simple to do!
1 slice sourdough bread, toasted
1/2 avocado, mashed
handful of pea shoots
drizzle of olive oil
1 large egg
salt and pepper to taste
Step 1: Add egg to a pot and cover completely with water. Bring water to a boil on the stove over the heat. Turn off the heat, and let the pot remain on the stove for 5 minutes. Next, drain the water and peel the egg under cold water. Slice the egg into quarters.
Step 2: Mix mashed avocado with lemon juice. Spread the avocado mixture over the toasted bread. Top with pea shoots, hemp seeds, a drizzle of olive oil, the hard-boiled egg, salt, and pepper.
