Mangoes are a juicy stone fruit that pack a healthy punch. Known to aid in digestion and support immunity, mangoes are also high in vitamin C (about 2/3 of your DV!) and a rich source of beta-carotene. Enjoy them sliced fresh, grilled, or dehydrated!
2 ripe mangoes, peeled, pitted and diced (about 3 cups)
1 small red onion, peeled and diced
1–2 jalapenos, seeded and diced
1/2 cup chopped fresh cilantro, loosely packed
juice of one lime
Toss all ingredients together until combined. Season with salt and pepper if needed.
