The Most Beautiful Salad Ever
1 bunch beets
1 bunch microgreens (such as pea shoots)
1 ripe avocado
1 red onion (or 2 small shallots)
This is a great non-recipe recipe. You'll want to scale the ingredients to how many people you're feeding. Thinly slice onions and marinate for 15 minutes in vinegar, olive oil, and a bit of sugar – a dash of cayenne pepper is a nice addition. Thinly slice the beets and quickly blanch in boiling water for a minute or two. Drain and rinse under cold water, pat dry and add to the onions. Toss, plate, and top with avocado and pea shoots.
