These beets are red and sweet. Low in calories and high in fiber, they pack quite the punch. Beets have also been proven to be great for blood flow and heart health, which makes them great for athletes and people on the move. They're in the same family as chard and spinach, and the greens of beets are just as delicious. One taste and we're sure you'll agree: this veggie is hard to beet!
1-2 beets per person
3 tbsp oil (think olive oil, avocado, coconut)
Salt and Pepper to Taste
A few sprigs of time (optional, for garnish)
Preheat your oven to 350. Chop (think 8ths, though this doesn't need to be exact). To peel or not to peel is up to your personal taste and preference. Place your beets in the pan and coat in the olive oil. Stir. At this point, you can add any seasonings you want (or these are truly fine on their own)! Slow roast at 350 for 1 hour.
