Of the sturdier pears, bosc pears have a flavor and texture that stands up to baking, poaching, and broiling. They can really hold their own! Bosc pears have a beautiful russet brown skin, and a great way to tell their ripeness is the "check the neck" test. Apply gentle pressure to the neck of the pear. It should yield slightly to your fingers.
