Everyone loves butternut squash. What’s not to love? You can puree, roast, mash, slice, and bake it! Eat it for breakfast, lunch, dinner, or dessert. Not only delicious, this squash is a good source of vitamin A, potassium, and fiber.
And yet, there is something not to love…peeling the darn thing. If the thick skin wasn’t bad enough, the curves and bulges will have you whistling while your whittling. Luckily, Trusted Harvest has done all of the work for you with this cubed butternut squash from Hepworth farms. So kick back, and enjoy!
Roasted Butternut Squash
16 ounces Cubed Butternut Squash
1 Tablespoon Vegetable Oil or Coconut Oil
2 Tablespoons of Maple Syrup
Preheat oven to 375 degrees. Combine oil and maple syrup then mix with the butternut squash, sprinkle with salt. Line a cookie sheet with foil, then evenly spread the squash on the sheet. Roast for about 20 minutes (depending on size of diced butternut and how gooey you want them).
