Did you know that cucumbers are a part of the gourd family? The more you know! Slicing cucumbers are known for their crisp flesh and cool taste. They are are most often used on salads, sandwiches and dips.

Cucumbers are considered a good source of Vitamin C, Vitamin K, Potassium, Magnesium, and Manganese. Best of all, if you have more cukes than you can use— you can always pickle them. They're the perfect summer veggie! 

Simple Peas and Cucumber Salad

One cucumber, sliced thin
1-2 Tsp Chopped Dill
One cup Shelled Peas
A head of fresh lettuce
Your favorite vinaigrette

Simply slice cucumber, pull apart your lettuce, add a teaspoon or two of chopped dill, and toss with peas and your favorite light vinaigrette. Finish off with a bit of lemon, some salt and pepper.
